It never fails, Dinner time ALWAYS has me stumped. As hard as I “try” to plan for it, it’s not smooth unless it’s our repeat meals. Otherwise, my three very opinionated men have something to say about it. Can’t blame them.
I usually end up making at least two variations of said meals and I typically give up and eat cereal myself (not sorry). So to save face and some of my sanity, I’m trying to be a bit more adventurous. Also, my sister in law sends me some pretty delicious yet simple meal/dessert ideas too!
I’ve found that my youngest is more likely to eat something if given a “this many bites” option verses my oldest who does better with the “only getting dessert if you eat it all” incentive. My husband, however, is not impressed with any option but his own. LOL.
I thought it’d be nice to share some of the “solid choices” for dinner in the Carson household.
First, my kids would eat jasmine rice, plain, every.single.day. If they could. That’s one of the few “side” dishes that my youngest son will eat. No Mac & cheese (oldest loves it), no mashed potatoes (oldest son loves it),not really into corn OFF the cob, or canned veggies. He loves asparagus (older son hates it), loves hummus (older son hates it)So…
*Ground chicken, jasmine rice. Boom!
*Sliced beef, jasmine rice. Another one!
*Chopped chicken breast and jasmine fried rice (add sliced carrots, shredded cabbage, soy sauce, tossed in hot oil with an egg).
*Good ol’ spaghetti with angel hair noodles, marinara sauce, ground Italian sweet sausage.
*Meatloaf. Not any meatloaf, it has to be GG’s recipe. With warm bread rolls or bread and butter.
*Pancakes and bacon -ALWAYS a winner. Eggs also for my hubby and oldest.
*Pasta salad
*Turkey chili
Anything other than the above and it’s a STRUGGLE.
